Mixed Fruit Jelly




Winter is the time when there are plenty of ripe oranges and strawberries available in market. Today I am going to share a very simple recipe of mixed fruit jelly with winter fruits. The jelly is extremely nutritious as it contains all the goodness of fruits. Plus it contains no added colours and no added preservatives! 
This jelly can be prepared in no time and there are no specific quantity mandates of the ingredients. I have used oranges, strawberries, dates and raisins. We can add apple and any type of berry as well. Refrain from using banana and grapes. I call it jelly and not jam as I have not used gelatine as a coagulating agent. Gelatine is not good for health so better to do without it! Trust me the jelly will turn out very good, just like the ones available in market. Here goes the recipe:

Ingredients (For 200 gm jelly):
Oranges- 3 large
Strawberries- 8
Dates- 6
Raisins- 15
Suger- 50 gms (1/2 cup)

Procedure:
Peel oranges, de-seed them and keep aside the bulby pulp. Dice the strawberries and de-seed the dates. Now in a mixer make a puree out of oranges, strawberries, dates and raisins. Heat a non-stick pan. Pour the fruit puree and cook on medium to low flame for 5 mins. keep stirring. Now add the sugar and cook for 3 mins on medium flame with continuous stirring. Keep an eye that the mixture doesnt get burnt.
You will notice that the colour turns blood red and consistency is jelly like. Put off the flame and let it cool.
Store in a dry container in refrigerator. Shelf life is 1 month in refrigerator as we did not use any preservatives.









Tips
1. Sugar can be adjusted as per individual taste as well as the sweet content of the fruits. Normally with sweet fruits, use 2 parts of fruit puree with 1 part of sugar.
2. I have added few orange peel bits while simmering the puree as I love orange marmalade. This is optional. If you want to add, please add very few. Adding more orange peel will make the jelly bitter!
3. If you are planning to prepare more quantity, store in small air tight containers. Use one and when it is consumed, open another. This will keep the jelly fresh for longer.
