Musur Daaler Khichuri (Masoor Daal Khichdi)

Khichdi is generally made from moong dal. But moog dal when roasted and cooked, becomes little difficult to digest. Masur dal is easily digestible and so is its khichdi. This is yet another recipe for sick foodies. Its easy, light, tasty and nutritious too.

INGREDIENTS:
1 Cup Rice
1 Cup Masur Dal
1 tsp turmeric (Haldi) powder
1 tsp cumin (Jeera) powder
1 tsp coriander (Dhania) powder
1 tsp whole cumin
2 Bay leaves
1 dry red chilli
1 big onion chopped
1 tsp ginger paste
1 big tomato chopped
2 cloves of garlic crushed
1 tsp sugar
Salt to taste
2 green chillies
Vegetables if available- Potato, cauliflower, beans, carrot
Oil 2 tsp
Ghee 1/2 tsptsp
1 ltr water.

PROCEDURE:
In a cooker, heat the oil. Add whole jeera and bay leaves and fry till golden. Then add red chilli, onions, ginger paste, crushed garlic , tomato and stir fry. Pepe Chicken (Papaya Chicken Stew)

Normally in a food blog we find all yummy and tasty recipes which can be consumed by a fit person. However, there are very few options for a person who is having stomach problems like gas, indigestion and acidity. Today I have a very tasty and nutritious chicken recipe which sick people can enjoy. It will also act as an agent to bring back taste for a person who has been suffering from fever.
So, here goes the magical recipe:

INGREDIENTS:
Chicken: 500 gms
Raw Papaya: 1 big cut in big pieces
Potatoes: 2 medium, diced
Beans: 6-8 cut in 2 inch size
Carrot: 2 medium diced
Onion: 2 medium chopped
Tomato: 1 medium chopped
Butter: 1 tea spoon
Jeera powder: 1 tsp
Coriander powder: 1 tsp
Turmeric: 1 tsp
Hung Curd: 1 tsp
Ginger grated/paste: 1 tsp
Garlic paste: 1 tsp
Salt to taste
Water: 2 Cups
Black pepper powder: 1/2 tsp

PROCEDURE:
Marinate the chicken with curd, turmeric, jeera powder, coriander powder, some salt and keep aside for 30 minutes.

Dim Pauruti (Egg coated bread fritters)

Dim Pauruti is one of the tastiest quick bees which can be prepared pretty fast.

INGREDIENTS:
2 EGGS
2 SLICES OF WHITE BREAD
4 TSP MILK
1 FINELY CHOPPED ONION
2 CHOPPED GREEN CHILLIES
1 TBSP REFINED OIL
SALT TO TASTE
BLACK PEPPER POWDER
TOMATO SAUCE 1 TSP

PROCEDURE:
Cut the bread slices into halves diagonally and keep aside.
Now in a bowl whisk the eggs. Add salt, milk, onions, chillies and mix well.
Heat the oil in a frypan.
Now dip a bread in the egg mixture and gently coat both sides.
Now fry it in the pan on both sides. Continue same for the remaining pieces.
Sprinkle black pepper and serve hot.
Garnish with tomato sauce.

Serves 2
Recipe time: 10 mins

Sooji Halwa

This one is for those with a sweet tooth. Halwa cooks in 7 mins and so it can be prepared without any preparation for a last minute sweet carving!

INGREDIENTS:
1 CUP SOOJI
1 CUP SUGAR
3/4 CUP GHEE
A HANDFUL OF DRY FRUITS
1 CUP WATER
A PINCH OF SALT
2 CARDAMOM POWDERED.

PROCEDURE:
In a nonstick cookware, pour the raw sooji and keep stiring dry until it turns golden.
Now add half of the ghee and continuesly stir. Add water, salt and bring to boil by simmerimg. When the sooji is cooked, it will loosen up. Then add the remaining  ghee, sugar and some dry fruits. Stir till the no big lumps remain. Turn of the flame and add the crushed cardamoms.
Garnish with some more dry fruits.

Serve hot. Serves 4.

A magical Hawaiian Sunset

Shopping at Queen's market or Sunset at the beach now became a tie!
Shopping won as usual, we stepped out with enthusiasm high
The breathtaking view then changed the whole idea
Such was the beauty of the kingdom called "Hilton Waikoloa"

The blue sky and the bluer pacific ocean
The orange-red sun and the green green lawn
The palm trees dancing by the rhythm of the breeze
The waves hit the lava rocks and the mist they release
The pools and the sun beds and the sun overhead
The orangish tinge and the orchids so rugged
Are all calling me to see them, feel them and get lost
In their magical world, elegent, beautiful and so vast!



Then there is the solitary Buddha Point, which is so spectacular
And posing from there is a must for every traveller

Beguni

Beguni is a tasty snack made with brinjal. You can enjoy begunis with tea or with khichdi on a rainy day...

INGREDIENTS:
1. A Small light weight brinjal with less seeds cut into very thin slices (preferably) with a slicer.
2. 4 Tabsps of bengal gram flour.
3. Musturd oil for deep frying.
4. 1 tsp poppy seeds.
5. 1/2 tsp onion seeds (kalonji/ kala jeera)
6. A pinch of turmeric
7. 1/2 tsp of soda bicarbonate.
8. Salt to taste.
9. A cup of water.
10. A pinch of powdered pepper.
11. A pinch of black salt.

PROCEDURE:
 In a mixing bowl add the gram flour, salt, turmeric, soda bicarbonate, poppy seeds, onion seeds and mix well. Now add water to make a smooth batter with a consistency of cake batter.
Heat the oil in a deep pan. Now coat the brinjal slices on both sides and deep fry till light brown.
Spinkle some black salt and powdered  pepper and serve hot.

Chicken Kasa

Chicken Kasa is the most delicious and simple recipe among all bong chicken recipes. Doubt if there exists any dish which can match the taste!
Chiken kasa goes well with plain white rice, fried rice, chapatis or parathas.

INGREDIENTS:
1. Chicken : 1 kg
2. Hung Curd : 1 tsp
3. Turmeric powder: 2 tsp
4. Oil : 3 tabsp
5. Ginger garlic paste: 2 tabsp
6. Medium sized diced onions: 6
7. Tomatoes : 2 medium
8. Red chillies : 3
9. Cloves : 2
10. Cinnamon: 1 (half inch)
11. Bay leaves: 2
12. Salt to taste.
13. Suger : half tsp
14. Water : half cup



FOR GARNISH:
Fried potatoes cut in one fourth: 2
Green chillies: 2  cut in halves
Lemon : one half

PROCEDURE:
Marinate the chicken with curd, 2 tsp oil and 1 tsp turmeric powder and keep aside for half and hour.
In a pan, pour the remaining oil and fry the potatoes with a pinch of salt and turmeric powder. Stain the potatoes and keep aside.
Now in the pan, saute the ginger garlic paste till it turns golden.

I have been reading story books and writing experiences ever since I can remember. When I was young, my father would insist me to write about every trip that we made in a diary. With years, this habit had matured within me and I find happiness in capturing the good times in the form of poems and write-ups.
When I started writing a blog it was a secret hideout location which was hidden from the rest of the world. Never thought that writing down my reflections  is going to culminate into this. 
This blog began with writing poems. Then it got dominated by my other two hobbies- Travel and Food. Being a Bong, I am a foodie . I love eating out as well as cooking delicacies. I also want to explore and discover the treasures of this planet. My itchy feet and my greedy tongue are the driving forces behind my writing. On request basis, I do write about products after reviewing them (only if I found them interesting)
